I am a bad food blogger. Rarely does my food gets a chance to be photographed. It is usually devored before I pull out the camera. I am not a person who makes up my own recipes. I follow recipes and put my spin on them – adapt them to make them my taste and maybe a little bit more healthier. Here are some wonderful recipes that I have adapted. Mango Nut Bread by Chef in You. Any mango lover's taste of heaven. I usually add whole eggs and mango puree to make the mix moist. I have tried it with pecans and walnuts. I also half the all purpose flour and add a mix of whole wheat and flax seed powder to my version of the mango bread
This Blueberry Zucchini bread from Rachel's blog is healthy and yummy. I reduced the sugar to almost 1/4 the suggested quantity, reduced all purpose flour and added flax instead. On one ocassion when I was out of fresh blueberries, I used raisins instead. The zucchinni adds the moisture and is a perfect treat
I am pretty sure that it is against the law to create something this yummy from a box mix. Oh boy! You need to try them - Yummy Chocolate cookies by Amy of Living Locurto - I skipepd the nuts and cream cheese - added both raisins and cranberries. I added white chocolate chips instead of the traditional chocolate to add a contrast to my cookies
