CC Challenge – Cranberry Mocktail and The Sunshine
Holiday season in the air. My local grocery stores have put out magazines featuring recipes for the holiday season. I have been browsing through the editions for some inspiration and when planning the Thanksgiving menu for this year the recipe for the cranberry mocktail caught my eye.
This year Kuttyma actually understood what Thanksgiving was about. Being a working day I was not ready to pull out all stops for Thanksgiving dinner. I wanted to make something simple yet related to the holiday.
Drinks I found make or break the meal. They add pizazz to an ordinary dinner. For our Thanksgiving dinner I made 2 drinks – the Cranberry Mocktail and the Sunshine. Both recipes came the Woolworths Fresh magazine.
The main course was butternut squash pasta with goat cheese, mushrooms and turkey (inspired from here).
Cranberry Mocktail
(Makes 1)
4 mint leaves
1 tablespoon lemon juice
1 can sparkling cranberry juice (plain cranberry juice will also work)
3-4 cubes of ice
To rim the glass – dip the glass in lemon juice and then dip in sugar crystals on a plate.
Tear/crush the mint leaves and add it to the bottom of the glass. Add the ice, lemon juice and cranberry juice.
Serve up the holiday cheer!
The Sunshine
(makes 1)
3-4 small pieces of pineapple
1/2 kiwi fruit cut into tiny pieces
Lime soda (this usually is sugar free but sprite or plain soda water will work in a pinch)
Add the fruit to the serving glass. Crush it a bit. Top off with the soda. Add few ice cubes and drink up.
