CC Challenge – Berry Oatmeal Crumble

One lazy Sunday, we headed out to Reg Tanna park armed with bread for the ducks and camera. It was the perfect morning to be outdoors. We had a blast.On a whim, we decided to stop for coffee and donuts at a coffee shop before heading home. As I sat down with my chai (the Aussie version of chai is like drinking a cinnamon bun btw) I picked up a magazine to browse. I was looking at the pictures with kuttyma peeping into it.

Her eyes caught this recipe (rather the picture) mainly because it showcased the berries. She is a sucker for them. She asked me what food it was and I read “Oatmeal Berry Crumble” and she was in love. One of her favorite books, The Gruffalo has a line which goes “And his favorite food is Gruffalo Crumble”

I dutifully took a picture of the recipe and promised her that we would try it someday. The someday turned out to be a Saturday we were struck at home due to rain. I needed something to keep kuttyma busy and asked her to help me make the crumble.

Oatmeal Berry Crumble

Ingredients

For the crumble:

3/4 cup self-raising flour

120 grams or so of cold butter cut into cubes

1/2 cup oats

1/4 cup silvered almonds

1/4 cup caster sugar (I learned that caster sugar is finer than regular sugar but coarser than icing sugar)

For the sauce

1/2 cup caster sugar

1/4 cup water

1 teaspoon vanilla

1.5 cups frozen mixed berries

Fresh mint and berries for garnish (optional)

Preheat the oven to 180 C.

Measure the flour and add the butter cubes to it. Mix well. Add the oatmeal, sugar and almonds. Mix well. Pop it in the fridge while you prepare the sauce.

In a sauce pan, make a simple sauce with the sugar and water. When it gets to a boil add the berries and let it thicken.

To assemble, in an ovenproof dish pour the berry sauce and top it with the crumble from the fridge.

Bake for 25 minutes or so till the top is brownish.

Garnish and Indulge.
