Eggless Banana Bread
Shankari requested the recipe for the eggless bread I baked last week. Here it is. It is foolproof, eggless, partly made of wheat and absolutely divine. This is a bread and not a cake. The difference I feel is that the bread is lighter, involves no beating, and has relatively less fat.
Eggless Banana Bread
Makes 1 loaf
3/4 cup all purpose flour
3/4 cup wheat flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup sugar (I usually play around with the amount of sugar I use, most often I add a little more than 1/4 cup sugar)
1/2 cup unsweetened applesauce (this is readily available in all stores but if you cannot find it you can always make your own – it is nothing but cooked, pureed and strained apples. Boil/bake apples and run then through the food processor to make applesauce)
3 large really ripe bananas
4 tablespoons butter melted (or 1/4 cup oil. I usually add around 2 tablespoons butter and add 2 tablespoons flaxseed powder)
1/4 teaspoon vanilla
Optional
1/2 cup chocolate chips or walnuts or a mix of both
Preheat oven to 350 F. Mix first 5 dry ingredients together. In a separate bowl, mash the bananas and add the wet ingredients. Mix everything together with a spoon. If the batter seems too thick add in a little more applesauce or some milk to make it thinner. Fold in chocolate chips and/or walnuts (if using them). Grease a 9″ loaf pan and pour the mix into it.
Bake for 45-50 minutes.Enjoy!
This can also be baked as muffins.
