My Grandma’s Chocolate Recipe

When I was in India, my grandmother showed me how to make a quick and easy chocolate. The recipe was so simple, yet delicious. Now, back in the US, I decided to try it out again. It turned out really well, so I decided to share it with you!

  • 3/4 cup sugar
  • 1 cup milk powder
  • 2 1/2 tsp cocoa powder
  • 1 tbsp butter
  • Water
  1. Grease a plate with a bit of butter.
  2. Sieve the milk and cocoa powders together.
  3. Soak the sugar in a bit of water, then bring it to a boil to dissolve the sugar. Keep on heat until it reaches a one-string consistancy.
  4. Turn off the heat and add the butter and milk and cocoa powders.
  5. Stir.
  6. Once fully incorporated, pour into the plate and let it set.
  7. Enjoy!

Cranberry Orange Loaf

This year, I decided to make a Christmas themed bread. I tried this very quick and delicious recipe that worked very well. It tasted great and was perfect for a Christmas special. I really loved the loaf and decided to share it with you!

INGREDIENTS:

  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup sugar
  • zest of an orange
  • 3/4 cup buttermilk
  • 1/2 cup oil
  • 2 eggs
  • 1 Tbsp fresh orange juice
  • 1/2 tsp vanilla extract
  • 1 cup chopped cranberries

DIRECTIONS:

  1. Preheat the oven to 350 degrees and grease a loaf pan.
  2. Mix the flour, salt, baking powder, and sugar, then set aside.
  3. In a seperate bowl, stir the orange zest, buttermilk, oil, eggs, orange juice, and vanilla together.
  4. Slowly combine the dry ingredients into the wet ingredients.
  5. Add the cranberries and stir until just combined.
  6. Pour into the pan and bake for 55 minutes.
  7. Enjoy!

Recipe: Apple Pear Jam

This year I decided to make a jam inspired by fall. I loved this recipe and found it quick and simple. The tanginess and sweetness of the jam works perfectly together. Everything balances the others out, making this the perfect homemade jam.

Ingredients:

  • 3 green apples, any kind
  • 1 pear
  • 2 cups apple juice
  • 3/4 cup sugar
  • 1 tablespoon lemon juice
  • 4 cloves
  • 2 cardamom pods
  • 2 inch cinnamon stick

Directions:

  1. Core and peel the apples and pear
  2. Cut each apple/pear into 8 pieces, each around the same size.
  3. Fill a heavy pot with the juice and place the fruits into the heavy pot.
  4. Bring to a boil on high, then reduce heat to medium
  5. Simmer for 35 minutes, covered. The fruits should soften.
  6. Press the mixture through a sieve, Make sure to get as much of the juice as you can out.
  7. Return the pulp to the pot and add the sugar, lemon, cloves, cardamom, and cinnamon.
  8. Bring to a boil and reduce the heat to low.
  9. Cook on the low heat for 1 hour and 45 minutes, uncovered, while stirring often. The mixture should gain some thickness.
  10. Enjoy!

Applesauce Cinnamon Muffins

It’s officially fall! Normally during this time of year, I make my delicious pumpkin cinnamon bread. This year, I decided to spice things up by making Applesauce Cinnamon muffins. We had so many cups of applesauce at home that we needed a new recipe to use them. This recipe was perfect for that! The muffins taste spectacular and they’re a perfect snack for school.

INGREDIENTS:

  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1/4 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 Tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • a pinch of salt

DIRECTIONS:

  1. Preheat the oven to 350 degrees. Place the cupcake wrappers in their spots to get the muffin tray ready.
  2. In a bowl, whisk together the vegetable oil and both the sugars. Add both eggs, and whisk until smooth. Stir in the applesauce, Greek yogurt, and vanilla extract until just combined.
  3. Stir in the flours, baking soda, baking powder, cinnamon, nutmeg and salt. Make sure not to overstir the batter.
  4. Pour the batter into the prepared muffin tray and tap to get rid of air bubbles.
  5. Bake for 16 minutes.
  6. Remove from oven and let cool.
  7. Enjoy!

My Favorite Brownie Recipe

I’ve made brownies many times, but there is one recipe which I consider the best. Everyone loves the recipe, which is a perfect combination of fudgy and crispy.

Ingredients:

  • 1 cup melted butter
  • 3 cups sugar  (white)
  • 1 tablespoon vanilla extract
  • 4 eggs
  • 1 ½ cups flour
  • 1 cup cocoa powder
  • 1 teaspoon salt
  • 1 cup chocolate chips

Directions:

  1. Preheat the oven to 350 degrees F. Grease a deep baking dish (9×13 is the preferred size).
  2. Combine the butter, sugar, and vanilla in a bowl. Beat in the eggs until blended.
  3. Gradually stir the flour, cocoa powder, and salt into the egg mixture until blended. Stir in the chocolate chips. Spread the batter evenly into the baking pan.
  4. Bake in the oven for 35 to 40 minutes. Cool pan on rack before cutting.
  5. Enjoy!

Recipe: Homemade Empanadas

I recently made empanadas for one of my projects. They turned out really well, so I thought I would share the recipe with you!

Ingredients:

Dough:
  • 4 cups flour
  • 2 teaspoons salt
  • ½ cup unsalted butter , room temperature
  • 1 egg , beaten
  • 2 Tablespoons oil
  • ¾ – 1 cup warm water
Filling:
  • mozzarella
  • cherry tomatoes cut in half
  • pesto

Recipe:

Dough:
  1. Add the salt and flour to a bowl and combine.
  2. Add the butter and egg and stir well.
  3. Add the oil and water and stir until it starts to come together.
  4. Place the dough in a greased bowl and cover.
  5. Let it rest at room temperature for an hour or put it in the fridge, taking it out 20 minutes before using.

Assembly:

  1. Divide the dough into a few pieces. Roll each piece into a circle.
  2. Use a round template to cut the dough into circles.
  3. Place about 2 tomato slices, a dollop of pesto, and a sliver of mozzarella on one side of the empanada.
  4. Fold the empanada over, so that it’s a semi circle
  5. Pinch the edges together or pinch them, then seal the ends by crimping them with a fork .
  6. Place empanadas on a baking sheet lined with parchment paper. Brush with egg wash and bake at 375° for about 30-35 minutes.

Merry Christmas and a recipe

Merry Christmas everyone! I decided to share a winter recipe to start off the holiday season, so here is how you make white chocolate and cranberry cookies!

Ingredients:

  • 1/2 cup softened butter
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¾ cup white chocolate chips
  • 1 cup dried cranberries 

Directions:

  1. Preheat the oven to 375 degrees F. Line the cookie sheets.
  2. In a bowl, cream together the butter, brown sugar, and white sugar.
  3. Beat in the egg and vanilla.
  4. Combine the flour and baking soda in a different bowl, then stir into the first mixture.
  5. Mix in the white chocolate chips and cranberries.
  6. Roll into small balls and place them on the cookie sheets.
  7. Bake for 8 minutes in the oven. Allow cookies to cool on wire racks.
  8. Enjoy!

These cookies are really delicious and I loved making and eating them. I gifted these homemade cookies to our neighbors. It’s a perfect treat for the holidays. I hope you like them!

Oreo Fudge: A Recipe

Recently I made oreo fudge. This recipe was so good and absolutely delicious. It’s very sweet and very tasty. The best part is that you only need three ingredients! It was really fun to make and I definitely enjoyed the process.

Ingredients

  • 18 oz white chocolate
  • 14 oz condensed milk
  • 2.5 cups coarsely crushed oreos

Directions

  1. Line a pan with parchment paper
  2. Prepare a double boiler and melt the white chocolate and condensed milk with the boiler, stirring often.
  3. Remove the bowl with the chocolate and condensed milk and add in the crushed oreos. Stir gently.
  4. Pour the fudge into the prepared pan. Spread evenly.
  5. Let the fudge set by cooling it for at least 45 minutes
  6. Cut the fudge as you wish and enjoy!

Mint Girl Cooks: Pumpkin Cinnamon Bread

It’s that time of year again! Pumpkin spice and everything nice! Every year, I make my signature dish: Pumpkin Cinnamon Bread.

I quickly scanned the recipe.”This doesn’t seem too difficult,” I told my mom who was waiting patiently for my response.”Well then,” she said as she smiled, “We can start making the pumpkin cinnamon bread.”

I always get nervous during baking, because baking is science. The measurements have to be accurate to get the perfect deliciouso treat. I always worry that I measured too much or too little of an ingredient.

The batter was almost complete. I knew I should’ve been happy but I was actually nervous because I had no idea if I had measured everything correctly.  Regardless, I quickly mixed the dry and wet ingredients, poured it into a loaf pan, and put it in the oven. I tried to convince myself it would be good although it was hard.

Nervously I set the timer. Would it work? When I heard the oven beeping I dashed to the oven and eagerly open its door. Once my mom came, she stuck a toothpick  in the middle then called “It’s ready!”

With trembling hands I took the pan out of the oven. Slowly, I cut myself a piece. When my tastebuds got the first tiny bite of bread they started to dance around in delight. That’s when I knew I had accomplished the recipe. I knew it was one of my greatest recipes and then I would make it again.
